| Austrian chef, Edgar Osojnik, has been wowing guests at Constantia's exclusive restaurant for over a decade. In Austria he received a Professional Cooking Certificate at the Austrian Chamber of Industrial Economy and a Food & Beverage Management Diploma from WIFI/Austrian Chamber of Industry. He also did a 3 year Apprenticeship at the Astoria Hotels in Austria, after which he work at several restaurants in Austria from 1986 until 1995. He is the Executive chef and a partner of the Buitenverwachting Restaurant Cape Town. |
| Edgar believes his menu is first and foremost about skill, and maintains: "It has to work, or it's not going on the menu." He gets his inspiration from Mother Nature, basic ingredients, and old recipe books: "I don't follow trends, but I include them", he says. This is obviously a recipe for success as his long list of accolades attest. |

| The cuisine wows almost everyone who eats here, and tends to make it into the top three of every food critic's Cape listing. Austrian chef Edgar Osojnik combines local ingredients with international techniques and flavors, like preparing kingklip in the tandoor and serving it with gingered bisque and basmati-pea samoosas, or creating creamy polenta-spinach soup and topping it with osso bucco tartlets. Crayfish is pan-fried and served with a linguine Nero and seafood bisque. End with the "chocolate variation", it's a masterpiece. |
| All the meals on offer are exemplary. Other exciting starters include the Trio of Norwegian Salmon served with lettuce and remoulade, and the Creamy Spinach, Tomato and Garlic Soup served with lamb osso busso pies. Scintillating mains include the crispy Pork Belly with honey thyme, Konsertina Potato and creamy leek; the unique Grilled Entrecote in a Bone Marrow crust, which is served with red wine shallot and mushroom rosti. |
| Also delicious are the Pan-fried rack of lamb with its own osso bucco sauce and gremolatta risotto; and the Pan-fried Loin of Springbok, served with goji berry-chocolate and almond brioche. Delicious desserts include the Deep-fried Banana Raviolis paired with passion fruit banana ragout and lemongrass ice cream set on a crocante tuille; and the delicious Open Strawberry Vanilla Strudel with its own green peppercorn compote and lime Sorbet. |
| Rooted in deep, decomposing granite soils and cooled by temperate sea breezes from the nearby oceans, Buitenverwachting's vines produce internationally acclaimed wines of great complexity with unique aromatic profiles. The farm was lovingly restored to its former glory while extensive planting of the most selected of cultivators was initiated. The result was a maiden grape harvest of 100 tons - the first harvest the farm had seen in 30 years. An historic achievement that lived up to its name. Guests to the restaurant are invited to sample these exquisite wines while enjoying their meals. Besides wine, the restaurant also serves a wide array of spirits, beers, liqueurs and other alcoholic and non-alcoholic beverages to compliment the meals. |
